6 T butter
¾ cup brown sugar
2 eggs
1 & ½ cups flour
½ cups cocoa powder
1t baking soda
½ t salt
2/3 cups mashed potatoes
2/3 cup buttermilk
Cream the butter and sugar. Add the eggs. Sift the dry ingredients together, and mix the mashed potatoes into the milk. Mixing on low, alternate the dry ingredients with the wet ingredients until the mixture is smooth and uniform. Don’t overmix. Scoop the dough into muffin tins (makes 12) and bake at 350 for c. 20 minutes. Cool and frost with:
1½ cups powdered sugar
3-4T milk or water
½ t peppermint flavor
Crush candy canes in a food processor or nut chopper and sprinkle the crushed candy over the frosted cupcakes.
