A wonderful way to use up old bananas,* banana bread comes in all varieties from very sweet and dessert-like to this version, which is low in fat and sugar and utilizes whole wheat flour. Delicious with soup and salad, you can also add a cream cheese schmear.
Cream:
4 T butter and 1/4 cup sugar
Add:
2 eggs
1 t vanilla
Beating on a lower speed, add:
3 bananas, breaking them into pieces as you add them
Sift together:
1 cup white flour
1 cup whole wheat flour
1 t baking powder
1 t baking soda
1/2 t salt
Add the banana mixture and blend with as few strokes as possible, then add:
1 cup chopped walnuts
Bake in a greased loaf pan at 350 for one hour or until a knife or other tester comes out clean.
*If you have spotty bananas about to turn bad, put them in the refrigerator until you have time to make banana bread (or a smoothie). Their skins will turn black in the fridge, but the banana inside will remain as it was.
